Ingredients

Scale
  • 1 pound ground beef
  • 2 medium zucchinis, diced
  • 1 large sweet potato, peeled and cubed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the onion and garlic for 2-3 minutes until fragrant.
  2. Add ground beef, breaking it apart as it cooks. Brown for 5-7 minutes until no longer pink; drain excess grease if necessary.
  3. Stir in sweet potato cubes and season with smoked paprika, oregano, salt, and pepper. Cover and cook for about 10 minutes until sweet potatoes are tender.
  4. Add diced zucchini to the skillet. Cook uncovered for an additional 5 minutes until zucchini is softened but retains some crunch.
  5. Remove from heat and garnish with fresh parsley before serving.
