Ingredients

  • 1 medium head of cauliflower (chopped)
  • 1 medium shallot (quartered)
  • 34 garlic cloves
  • 2 tablespoons olive oil
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1/2 cup red lentils
  • 2 cups vegetable broth
  • 2 1/2 cups unsweetened almond milk (divided)

Instructions

  1. Preheat your oven to 425ºF.
  2. In a large mixing bowl, combine chopped cauliflower, shallots, and garlic. Drizzle with olive oil, then sprinkle with turmeric, cumin, and sea salt. Toss to coat evenly.
  3. Spread the vegetables on a baking sheet and roast for about 30 minutes, flipping halfway through.
  4. In a saucepan, combine roasted vegetables with red lentils, vegetable broth, and 2 cups of almond milk. Bring to a boil over medium heat.
  5. Reduce heat to simmer for 20 minutes until lentils are tender.
  6. Use an immersion blender to puree until smooth; stir in the remaining almond milk before serving.
