  • 2 tbsp Olive oil
  • 1 medium Onion (diced)
  • 3 cloves Garlic (minced)
  • 1 tsp Fresh ginger (minced)
  • 1/2 cup Bell peppers (diced)
  • 1 tsp Italian seasoning (optional)
  • 1/4 tsp Red pepper flakes (optional)
  • 1 tsp Sea salt
  • 1/2 tsp Black pepper
  • 1 lb Boneless skinless chicken breasts
  • 6 cups Chicken broth, reduced sodium
  • 1 cup Broccoli (cut into florets)
  • 1 cup Cauliflower (cut into florets)
  • 2 tbsp Lemon juice

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat until shimmering.
  2. Sauté diced onion, minced garlic, and ginger for 3–4 minutes until fragrant.
  3. Add diced bell peppers, Italian seasoning, red pepper flakes, sea salt, and black pepper; cook for an additional 3 minutes.
  4. Incorporate the chicken breasts and chicken broth; bring to a simmer and cook for about 20 minutes.
  5. Remove the chicken breasts, shred them, then return them to the pot.
  6. Stir in broccoli and cauliflower florets; simmer for another 10 minutes until tender.
  7. Finish by stirring in lemon juice before serving hot.
