  • 1 1/4 cup blanched almond flour (or tigernut flour)
  • 3 Tbsp coconut sugar
  • 3 Tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 2 Tbsp dark chocolate
  • 3 Tbsp peanut butter (or Sunbutter)

Instructions

  1. Combine almond flour, coconut sugar, ground flax, and salt in a food processor; pulse until mixed.
  2. Add melted coconut oil, water, and vanilla extract; blend until smooth.
  3. Line a baking tray with parchment paper, pour in the mixture, and spread evenly. Press down firmly and freeze for 20 minutes.
  4. Melt dark chocolate with peanut butter until smooth; spread over the chilled base.
  5. Melt remaining dark chocolate with coconut oil; pour over the filling layer and freeze for another 20 minutes.
  6. Cut into bar shapes after fully set and enjoy!
