- 8 oz. dry farfalle pasta
- 3 tsp. minced garlic
- 1 can (14.5 oz.) diced tomatoes
- 1 can (8 oz.) tomato sauce
- 2 cups low sodium chicken broth
- 2/3 cup fat-free cottage cheese
- 1 cup part-skim mozzarella cheese
Instructions
- In a large skillet over medium-high heat, add olive oil and sauté minced garlic for one minute.
- Add lean ground beef, season with salt, pepper, oregano, and onion flakes; cook until browned.
- Pour in diced tomatoes, tomato sauce, chicken broth, and farfalle pasta; stir to combine.
- Cover and bring to a boil; reduce heat and simmer for 14-15 minutes until pasta is tender.
- Remove from heat; stir in cottage cheese and top with mozzarella cheese.
