  • 1 poblano pepper, seeded and diced
  • 12 large eggs, whisked
  • 6 large tortillas
  • 1 (15-ounce) can black beans, drained and rinsed
  • 68 ounces shredded cheddar cheese

Instructions

  1. Preheat oven to 425°F if baking.
  2. In a skillet over medium-high heat, cook ground turkey sausage until browned; drain excess fat.
  3. Sauté diced poblano pepper for 2–3 minutes until soft.
