  • 3/4 cup Greek yogurt
  • 1 tablespoon taco seasoning
  • 3 cups shredded chicken
  • 1.5 cups shredded Mexican cheese (divided)
  • 10 oz. can red enchilada sauce
  • 8 high-fiber flour tortillas

Instructions

  1. Preheat your oven to 375 degrees F and spray a baking dish with nonstick cooking spray.
  2. In a mixing bowl, combine Greek yogurt, refried beans, and taco seasoning until smooth. Fold in shredded chicken and 1/2 cup of cheese.
  3. Lay out tortillas and fill each with about 1/3 cup of the chicken mixture. Roll tightly and place seam-side down in the baking dish.
  4. Pour red enchilada sauce over the rolled tortillas and sprinkle remaining cheese on top.
  5. Bake for 15-20 minutes until cheese is melted and bubbly.
