  • 2 pounds lean ground beef
  • 15 oz can sliced stewed tomatoes
  • 10 oz can diced tomatoes with green chiles (RO-TEL)
  • 15 oz can black beans
  • 15 oz can pinto beans
  • 15 oz can whole kernel corn
  • 12 oz bag frozen pepper & onion blend
  • 12 oz bag frozen broccoli & cauliflower florets
  • 8 oz fat-free cream cheese
  • 1 cup fat-free Greek yogurt
  • 2 packets taco seasoning
  • 1 packet ranch dip mix

Instructions

  1. In a large pot over medium-high heat, brown the lean ground beef until fully cooked.
  2. Add the sliced stewed tomatoes, diced tomatoes with green chiles, black beans, pinto beans, corn, taco seasoning, and ranch dip mix. Stir well and bring to a boil.
  3. Incorporate the frozen pepper & onion blend and broccoli & cauliflower florets. Reduce heat to simmer for about 6-8 minutes until vegetables are tender.
  4. Lower the heat or turn off if serving immediately, then stir in the cream cheese and Greek yogurt until fully blended.
  5. Serve hot and garnish with optional toppings like fresh cilantro, diced onion, jalapeños, shredded cheese, or tortilla chips.
