- 2 pounds lean ground beef
- 15 oz can sliced stewed tomatoes
- 10 oz can diced tomatoes with green chiles (RO-TEL)
- 15 oz can black beans
- 15 oz can pinto beans
- 15 oz can whole kernel corn
- 12 oz bag frozen pepper & onion blend
- 12 oz bag frozen broccoli & cauliflower florets
- 8 oz fat-free cream cheese
- 1 cup fat-free Greek yogurt
- 2 packets taco seasoning
- 1 packet ranch dip mix
Instructions
- In a large pot over medium-high heat, brown the lean ground beef until fully cooked.
- Add the sliced stewed tomatoes, diced tomatoes with green chiles, black beans, pinto beans, corn, taco seasoning, and ranch dip mix. Stir well and bring to a boil.
- Incorporate the frozen pepper & onion blend and broccoli & cauliflower florets. Reduce heat to simmer for about 6-8 minutes until vegetables are tender.
- Lower the heat or turn off if serving immediately, then stir in the cream cheese and Greek yogurt until fully blended.
- Serve hot and garnish with optional toppings like fresh cilantro, diced onion, jalapeños, shredded cheese, or tortilla chips.
