  • 1 pound cooked turkey bacon
  • 8 ounces cream cheese
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/3 cup avocado mayonnaise
  • 1 cup heavy cream
  • 1 store-bought cooked rotisserie chicken (shredded)
  • 1 1/2 cups diced red onion
  • 8 ounces sliced baby bella mushrooms
  • 8 ounces baby spinach
  • 2 cups mozzarella cheese, shredded
  • ½ teaspoon hot sauce
  • 1 teaspoon dry mustard
  • ½ teaspoon white pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika

Instructions

  1. Preheat oven to 375°F.
  2. In a skillet, cook turkey bacon until crispy; remove and crumble.
  3. In a saucepan, combine cream cheese, Parmesan, cheddar, avocado mayonnaise, heavy cream, hot sauce, dry mustard, and seasonings over medium heat until creamy.
  4. Stir in crumbled turkey bacon.
  5. Sauté diced onions and mushrooms in reserved fat; add garlic and spinach until wilted.
  6. Combine the cheese mixture with the sautéed veggies and shredded chicken in a casserole dish; top with mozzarella cheese.
  7. Bake for 20 minutes, then broil for 1-2 minutes until golden brown.
