  • 3 large bell peppers
  • 1 tsp olive oil
  • 1 pound lean ground beef
  • 1 cup keto tomato sauce
  • 1 cup whole milk ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Wash the bell peppers, cut off the tops, and remove seeds.
  2. In a skillet over medium heat, add olive oil and cook fennel seeds. Add ground beef and brown it.
  3. In a mixing bowl, combine cooked beef with tomato sauce, ricotta cheese, half of the mozzarella, and Parmesan cheese. Mix well.
  4. Stuff each bell pepper with the meat mixture and place them upright in a baking dish.
  5. Top each stuffed pepper with remaining mozzarella.
  6. Cover with foil and bake for 30 minutes; then remove foil and bake for an additional 10 minutes until cheese is golden.
