Ingredients

  • 2/3 cup coconut flour
  • 2 tbsp psyllium husk powder
  • 1 tsp xanthan gum
  • 1 tsp baking powder
  • GENEROUS pinch salt
  • 1 tbsp nigella and/or sesame seeds
  • 1 cup hot water
  • 1/4 cup natural yogurt
  • 2 tbsp melted coconut oil or olive oil
  • handful chopped parsley or cilantro

Instructions

  1. Preheat the oven to 180°C (356°F).
  2. In a mixing bowl, combine coconut flour, psyllium husk powder, xanthan gum, and salt.
  3. Add hot water, yogurt, and melted oil to the dry ingredients; mix until a dough forms.
  4. Let the dough rest for a few minutes until less sticky.
  5. Divide into six pieces and roll each between parchment paper into flatbreads about 1/2 cm thick.
  6. Place on an upturned baking sheet and optionally sprinkle with seeds.
  7. Bake for 12-15 minutes until lightly browned.
  8. Top with melted butter or oil and garnish with herbs before serving.
