- 5 eggs (whites and yolks separated)
- 6 tbsp coconut flour
- 3 tbsp full-fat coconut milk
- 1 tsp xanthan gum
- 1 tsp keto-friendly baking powder
- 1 pinch sea salt
- 1 tbsp melted coconut oil (plus more for greasing)
Instructions
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine coconut flour, xanthan gum, baking powder, and sea salt.
- In another bowl, whisk together coconut milk, egg yolks, and melted coconut oil.
- Whip egg whites until stiff peaks form in a separate bowl.
- Gently fold the dry ingredients into the whipped egg whites and add the wet mixture gradually.
- Grease a loaf pan with coconut oil and pour in the batter.
- Bake for approximately 40 minutes or until golden brown.
- Allow to cool completely before slicing.
