Easy to prepare and gluten-free, this dessert is not only delicious but also versatile enough to satisfy various palates.

Ingredients

Scale
  • 1 cup strawberries (chopped)
  • 1 teaspoon lemon juice
  • 1 tablespoon erythritol
  • 1/2 cup water
  • 1/2 cup butter (unsalted, softened)
  • 1/2 cup erythritol
  • 4 eggs (separated)
  • 1 tablespoon vanilla extract
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 1 cup mascarpone cheese
  • 1 cup cream (whipping)
  • 2 tablespoons erythritol, ground
  • 2 cups strawberries (sliced)

Instructions

  1. Prepare the strawberry mixture by combining chopped strawberries with lemon juice and erythritol; let sit for 10 minutes.
  2. In a mixing bowl, beat softened butter with erythritol until creamy. Add egg yolks one at a time and stir in vanilla extract.
  3. Combine coconut flour, baking powder, and salt in another bowl, then gradually mix into the butter mixture with water until smooth.
  4. Beat egg whites until stiff peaks form and gently fold them into the batter. Pour into a greased baking dish and bake at 350°F (175°C) for about 25 minutes or until golden brown.
  5. While the cake cools, whip the cream until soft peaks form. Mix mascarpone with ground erythritol and vanilla extract, then fold in whipped cream until smooth.
  6. Once cooled, slice the cake into layers and assemble by alternating layers of cake, strawberry mixture, and cream layer in a serving dish.
  7. Chill for at least one hour before serving to allow flavors to meld.
