  • 1 1/2 lb ground beef
  • 1/4 cup chopped onion
  • 2 cloves garlic (minced)
  • 12 ounces cauliflower rice (fresh or frozen)
  • 1 medium green pepper (chopped)
  • 1/2 medium red or orange pepper (chopped)
  • 1/2 cup diced tomatoes
  • 1 tbsp tomato paste
  • 1 1/2 cups shredded mozzarella

Instructions

  1. Heat avocado oil in a large skillet over medium heat. Add ground beef, onion, garlic, Italian seasoning, salt, pepper, and red pepper flakes. Cook until beef is browned.
  2. Stir in cauliflower rice, chopped peppers, diced tomatoes, tomato paste, and water. Bring to a simmer and reduce heat to medium-low. Cook for about 10 minutes until vegetables are tender.
  3. Sprinkle shredded mozzarella over the mixture and cover with a lid. Cook for an additional 3-4 minutes until cheese melts.
