  • 3 cups (438g) gluten-free all-purpose flour (Cup4Cup recommended)
  • 1 packet (2 ¼ tsp) instant rapid-rise yeast
  • 1 tablespoon psyllium husk powder (optional)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 ½ cups (360g) warm water (110°F)
  • 2 large eggs (room temperature)
  • ¼ cup (85g) honey
  • ¼ cup (55g) vegetable oil

Instructions

  1. In a stand mixer, combine the gluten-free flour, yeast, optional psyllium husk powder, baking powder, and salt on low speed until mixed.
  2. Add warm water, eggs, honey, and vegetable oil. Mix on low until the dough comes together.
  3. Increase speed to medium and beat for about 5 minutes until the dough is stiff but sticky.
  4. Grease a 9×4 baking pan and pour the dough in, smoothing the top with a spatula. Cover with greased plastic wrap.
  5. Allow to rise in a warm spot for about 30 minutes until it reaches two-thirds of the pan height.
  6. Preheat oven to 350°F while the dough rises.
  7. Remove plastic wrap and bake for 40-50 minutes until golden brown and internal temperature hits 205°F.
  8. Cool in the pan for 5 minutes then transfer to a cooling rack; let cool completely before slicing.
