  • 2 large eggs

  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix 1 1/2 cups flour, 1/2 cup sugar, 1/2 teaspoon baking powder, melted butter (1/2 cup), and salt (1/4 teaspoon) until crumbly. Reserve 1/2 cup for topping.
  3. Press the remaining mixture into an 8×8-inch baking pan lined with parchment paper and bake for 12-15 minutes until lightly golden.
  4. In another bowl, whisk together 2 eggs, 1 cup sugar, 1/4 cup flour, fresh lemon juice (1/3 cup), and lemon zest (1 tablespoon) until smooth.
  5. Pour the lemon mixture over the baked crust and sprinkle reserved crumbs on top.
  6. Bake for an additional 20-25 minutes until filling is set and top is golden.
