  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 8 tablespoons unsalted butter
  • 2 eggs
  • 8 ounces semi-sweet chocolate
  • 1/2 teaspoon xanthan gum
  • 1/8 teaspoon kosher salt
  • 2 tablespoons neutral oil
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons light corn syrup
  • 2/3 cup heavy whipping cream
  • 1/8 teaspoon kosher salt
  • 3 ounces miniature M&Ms candies or multicolored Sixlets (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In one bowl, whisk together gluten-free flour, cocoa powder, and salt. In another bowl, cream together butter and sugars until smooth, then add eggs and mix well.
  3. Gradually combine dry ingredients into the wet mixture until just mixed.
  4. Pour batter into prepared pan and bake for approximately 28 minutes.
  5. For the topping, heat heavy cream until simmering, then stir in chopped chocolate until melted. Pour over cooled brownies.
  6. Allow to set before slicing into squares.
