- 2 eggs
- 8 ounces semi-sweet chocolate
- 1/2 teaspoon xanthan gum
- 1/8 teaspoon kosher salt
- 2 tablespoons neutral oil
- 2 teaspoons pure vanilla extract
- 2 tablespoons light corn syrup
- 2/3 cup heavy whipping cream
- 1/8 teaspoon kosher salt
- 3 ounces miniature M&Ms candies or multicolored Sixlets (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
- In one bowl, whisk together gluten-free flour, cocoa powder, and salt. In another bowl, cream together butter and sugars until smooth, then add eggs and mix well.
- Gradually combine dry ingredients into the wet mixture until just mixed.
- Pour batter into prepared pan and bake for approximately 28 minutes.
- For the topping, heat heavy cream until simmering, then stir in chopped chocolate until melted. Pour over cooled brownies.
- Allow to set before slicing into squares.
