- 4 sweet or hot Italian sausage links (uncooked, butterflied)
- 1 tablespoon extra virgin olive oil
- 1 green bell pepper (diced)
- 1 red bell pepper (diced)
- 1 yellow onion (diced)
- 8 oz mushrooms (sliced)
- 2 cloves garlic (pressed or minced)
- 1 tablespoon balsamic vinegar
- 6 oz shredded mozzarella cheese
Instructions
- Preheat your oven to 350°F. Line a baking sheet with foil and spray it with nonstick spray.
- Heat a cast iron skillet over medium-high heat and add the butterflied sausages cut side down. Sear until golden brown, about 5 minutes per side. Transfer to the prepared baking sheet.
- In the same skillet, add olive oil and sauté the diced bell peppers and onion until softened, about 5 minutes. Add mushrooms and cook until tender; stir in garlic and balsamic vinegar just before removing from heat.
