  • 4 pounds boneless beef chuck roast
  • 12 ounces whole pepperoncini peppers (with juice)
  • 2 cups beef stock
  • 1 large onion
  • 5 cloves garlic
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 tablespoons dried Italian seasonings
  • 1 teaspoon onion powder
  • 1 bay leaf

Instructions

  1. Prepare your slow cooker by combining beef stock, pepperoncini peppers (with juice), sliced onion, chopped garlic, onion powder, bay leaf, and Italian seasonings.
  2. Cut the beef into six-inch chunks and season with salt and pepper.
