  • 10 ounces Frozen Cauliflower Rice
  • 23 Tablespoons Oil
  • 2 Lbs Ground Beef
  • 1 Small Red Bell Pepper
  • 1 Small White Onion
  • 4 Tablespoons Taco Seasoning
  • 1/2 Cup Water
  • 3 Cups Shredded Colby/Jack Cheese
  • 1 Cup Sour Cream

Instructions

  1. Preheat your oven to 350ºF (175ºC).
  2. In a skillet, heat oil over medium-high heat and pan fry the cauliflower rice until browned. Transfer it to a greased casserole dish.
  3. In the same skillet, brown the ground beef with chopped bell pepper and onion. Drain excess fat, then add taco seasoning, water, and tomato paste. Cook until liquid absorbs.
  4. Layer the beef mixture on top of the cauliflower rice in the casserole dish.
  5. Top with shredded cheese and bake for 10-15 minutes until bubbly.
  6. Finish with sour cream and your choice of toppings before serving.
