- 6 cups vegetable broth
- 1 cup brown lentils, rinsed
- 1 lb red potatoes, chopped into 1” pieces
- 1 cup baby spinach
Instructions
- In a large pot, heat the olive oil over medium heat. Add onion, carrots, and celery; sauté for 10-12 minutes until softened.
- Stir in minced garlic and cumin; cook for an additional minute until fragrant.
- Add the bay leaf, thyme, vegetable broth, lentils, and potatoes. Mix well.
- Bring to a boil then reduce heat to low; simmer for 30-35 minutes until lentils are tender.
- Stir in the baby spinach just before serving until wilted. Season with salt and pepper to taste.
