Ingredients

  • 2 cups broccoli florets
  • 2 cups Brussels sprouts, halved
  • 1 medium-large sweet potato, cubed
  • 1 can (15 oz) chickpeas
  • Olive oil, spices (garlic powder, oregano, smoked paprika, cumin)
  • Cherry tomatoes
  • Kalamata olives
  • Feta cheese (optional)
  • Fresh parsley
  • Tahini
  • Maple syrup
  • Dijon mustard
  • Lemon juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss broccoli, Brussels sprouts, sweet potato, onion, and chickpeas with olive oil and spices.
  3. Spread on a baking sheet and roast for 25–30 minutes until golden.
  4. Meanwhile, whisk tahini dressing ingredients in a small bowl until smooth.
  5. Assemble bowls with roasted veggies and toppings; drizzle with dressing before serving.
