  • 1/2 lb lean ground beef
  • 24 oz marinara sauce
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise, removing seeds and membranes.
  2. Place the squash in a baking dish and bake for 50-60 minutes until fork-tender. Cool for 10 minutes before shredding into strands with a fork.
  3. In a skillet over medium heat, brown the ground beef until fully cooked (about 7-10 minutes). Drain excess grease and add marinara sauce; simmer for an additional 2-3 minutes.
  4. In a mixing bowl, combine ricotta cheese, Italian seasoning, salt, pepper, Parmesan cheese, and 1 cup of mozzarella.
  5. Assemble by pouring half of the meat sauce over the shredded spaghetti squash, mixing well. Layer with the ricotta mixture and top with remaining meat sauce and mozzarella.
  6. Bake for another 10-20 minutes until cheese is melted and bubbly. Optional: broil for an additional 2-3 minutes for extra browning.
