Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, mix sliced strawberries with strawberry jam and set aside to macerate.
  3. In one bowl, whisk together flour, baking powder, and salt. In another bowl, beat together sugar, oil, eggs, egg whites, extracts, sour cream, and milk until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Gently fold in half of the macerated strawberries and divide batter between prepared pans.
  6. Bake for about 20 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a cooling rack.
  7. For frosting, whip cream cheese and powdered sugar until smooth; gradually add cold heavy cream while mixing until stiff peaks form.
  8. Assemble the cake by layering with whipped frosting and remaining macerated strawberries.
