  • 1 lb boneless, skinless chicken breast
  • 8 oz spaghetti
  • 1 tbsp olive oil
  • 1/2 cup diced onions
  • 2 cloves minced garlic
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook spaghetti according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and smoked paprika. Cook for 6–7 minutes per side until fully cooked. Remove, slice into strips, and set aside.
  3. In the same skillet, melt butter and sauté onions and garlic for 2–3 minutes until softened.
  4. Add chicken broth to the skillet; bring to a simmer. Stir in heavy cream and cook for an additional 2 minutes until slightly thickened.
  5. Reduce heat to low, then stir in Monterey Jack cheese and Parmesan until melted and smooth.
  6. Toss cooked spaghetti in the sauce until evenly coated.
  7. Top with sliced chicken strips, sprinkle with parsley, and serve hot.
