- 1 baguette (sliced into 1/2 inch thick rounds)
- 1 tbsp olive oil (for brushing)
- 250 g Baby Bella mushrooms (thinly sliced)
- 2 garlic cloves (minced)
- 1/4 cup apple vinegar
- 1 package brie cheese (sliced)
- Salt and pepper (to taste)
- Fresh parsley (for garnish)
- Crushed red pepper flakes (optional)
Instructions
- Preheat the oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and brush both sides with olive oil. Toast in the oven for 3-5 minutes until golden brown.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add sliced mushrooms and cook until golden brown, approximately 5-7 minutes. Pour in apple vinegar and simmer for another 2-3 minutes until reduced by half. Season with salt, pepper, and red pepper flakes if desired.
- Lay slices of brie on each toasted baguette slice followed by a spoonful of mushroom mixture. Return to the oven for an additional 3-5 minutes until the brie begins to melt.
- Remove from the oven, garnish with fresh parsley, and serve warm.
