  • 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

Instructions

  1. Line an 8-inch or 9-inch square baking dish with parchment paper.
  2. In a large saucepan over medium heat, melt the butter and brown sugar until combined. Add the vanilla extract and rolled oats; mix well.
  3. Cook on low heat for about 3 to 4 minutes, stirring frequently.
  4. Pour half the oat mixture into the prepared dish and press down firmly.
  5. In a microwave-safe bowl, combine peanut butter and chocolate chips; microwave until smooth.
  6. Pour the melted chocolate mixture over the oat crust, reserving some for drizzling later.
  7. Layer the remaining oat mixture on top and drizzle with reserved chocolate.
  8. Refrigerate for 2 to 3 hours until set before cutting into squares.
