  • 2 tbsp honey
  • 4 garlic cloves (minced)
  • 2 lb chicken breasts (boneless, skinless)
  • 8 oz fresh mozzarella (torn into pieces)
  • 2 cups grape tomatoes (halved)
  • Sea salt and black pepper to taste
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp Dijon mustard
  • 2 tbsp vegetable oil
  • 2 tbsp fresh basil (chopped)

Instructions

  1. Preheat the oven to 400°F.
  2. In a small bowl, mix balsamic vinegar, honey, olive oil, garlic, Italian seasoning, onion powder, garlic powder, and Dijon mustard until combined.
  3. In another bowl, combine mozzarella cheese, grape tomatoes, basil, salt, and pepper.
  4. Heat a large oven-safe skillet over medium-high heat; add oil and sear seasoned chicken for 2-3 minutes on each side until golden brown.
  5. Pour the balsamic mixture over the chicken and let simmer briefly.
  6. Top with cheese mixture and bake uncovered for 18-23 minutes until chicken reaches 165°F.
  7. Rest for 3-5 minutes before serving.
