- 1 1/2 lb chicken breast
- 1 cup cubed fresh pineapple
- 1/2 head broccoli
- 1/2 cup red bell pepper
- 2 stalks green onion
- 2 small cloves garlic
- 1 inch fresh ginger
- 3–4 tbsp oil (for stir-frying)
- Salt to taste
- 2 –3 tbsp coconut aminos
- 2 tbsp arrowroot flour
- 1/3 cup coconut aminos
- 2 tbsp rice vinegar
- 1 tbsp arrowroot flour
- 1 tbsp sesame oil
- ~ 3 tbsp pineapple juice
Instructions
- Cut chicken into small pieces and marinate with coconut aminos and arrowroot flour for at least 15 minutes.
- Chop broccoli, red bell pepper, garlic, ginger, and green onions (separate white and green parts).
- In a skillet over medium-high heat, sauté vegetables for about 3 minutes; set aside.
- In the same skillet, cook marinated chicken with garlic until browned.
- Add vegetables, ginger, pineapple, and teriyaki sauce mixture; stir until well-coated and sticky.
- Garnish with green onions and serve hot.
