  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 cup dry orzo pasta
  • 1 tsp salt (divided)
  • 1 tsp black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • juice from ½ lemon
  • ½ cup grated Parmesan
  • freshly ground black pepper (for serving)
  • chili flakes (for serving)

Instructions

  1. Prepare ingredients: chop onion, mince garlic, grate Parmesan, and season salmon.
  2. Sear salmon in olive oil and butter over medium-high heat for 3-4 minutes on each side until golden brown. Remove from skillet.
  3. Cook onion and garlic in the same skillet until soft. Add orzo and toast for 1 minute.
  4. Pour in chicken broth, bring to a boil, then simmer until orzo is nearly al dente.
  5. Stir in spinach until wilted, then add lemon juice and Parmesan; adjust seasoning as needed.
  6. Return salmon to skillet for an additional couple of minutes to heat through.
  7. Serve warm, garnished with black pepper and chili flakes.
