  • 8 oz. sliced mushrooms
  • 2 tsp. olive oil
  • 1 can (2.25 oz.) sliced black olives (optional)
  • 1 cup shredded Mozzarella cheese
  • 1 cup shredded Italian Blend cheese
  • 4 eggs
  • ½ cup heavy cream
  • 2 oz. sliced pepperoni
  • Italian herb seasoning and garlic powder

Instructions

  1. Preheat oven to 400°F (200°C) and spray a glass pie dish with non-stick spray.
  2. Sauté mushrooms in olive oil until browned; drain olives.
  3. In a bowl, combine cheeses and seasonings; in another bowl, whisk eggs with cream and garlic powder.
  4. Layer cheese mixture in the pie dish, pour egg mixture over it, then add mushrooms, olives, and top with pepperoni.
  5. Bake for 30-35 minutes until set; let cool slightly before slicing.
