- 2 tsp. olive oil
- 1 can (2.25 oz.) sliced black olives (optional)
- 1 cup shredded Mozzarella cheese
- 1 cup shredded Italian Blend cheese
- 4 eggs
- ½ cup heavy cream
- 2 oz. sliced pepperoni
- Italian herb seasoning and garlic powder
Instructions
- Preheat oven to 400°F (200°C) and spray a glass pie dish with non-stick spray.
- Sauté mushrooms in olive oil until browned; drain olives.
- In a bowl, combine cheeses and seasonings; in another bowl, whisk eggs with cream and garlic powder.
- Layer cheese mixture in the pie dish, pour egg mixture over it, then add mushrooms, olives, and top with pepperoni.
- Bake for 30-35 minutes until set; let cool slightly before slicing.
