- 6 Tbsp aquafaba (chickpea water)
- 2 tsp ground flaxseed
- 6 Tbsp water
- 5 oz coconut milk (room temperature)
- 2 oz melted coconut oil
- 16 oz all-purpose flour
- 2 oz sugar
- 1 tsp salt
- 1 ½ tsp quick-rise yeast
- 3 c olive oil (for frying)
- powdered sugar

- shredded coconut (or chopped nuts etc.)
- jam or any other vegan filling (if desired)
Instructions
- In a bowl, mix aquafaba, flaxseed, and water; let it thicken for 10 minutes.
- Combine coconut milk, melted coconut oil, sugar, and the yeast mixture in a mixing bowl. Gradually add flour until a soft dough forms; knead for 5 minutes.
- Allow the dough to rise in a greased bowl covered with a damp cloth for about 1 hour.
- Roll out the risen dough and cut into shapes. Set aside on parchment-lined baking sheets.
- Heat olive oil to around 350°F (175°C) in a deep fryer or pot and fry doughnuts until golden brown on each side.
- Drain excess oil on paper towels and coat with powdered sugar or desired toppings.
