- 6 *8 inch Tortillas
- 1/2 cup Granulated Sugar
- 1 tsp Ground Cinnamon
- 1/3 cup Butter (melted)
- 4 oz cream cheese (softened)
- 1/4 cup powdered sugar
- 3/4 cup canned pumpkin puree
- 1/2 tsp pure vanilla extract
- 1 1/2 tsp pumpkin pie spice
- 1/2 cup Heavy Whipping Cream
- 2 Tablespoons Powdered Sugar
- 1/2 teaspoon Vanilla Extract
- Pecans for garnish (chopped)
Instructions
- Preheat oven to 400°F (200°C).
- Cut out rounds from tortillas using a cookie cutter.
- Mix granulated sugar and cinnamon on a plate. Poke holes in each tortilla round with a fork.
- Brush both sides of the tortillas with melted butter and coat in the cinnamon-sugar mixture.
- Place the tortillas between the cups of an upside-down muffin tin and bake for about 10 minutes until golden brown.
- Whip together heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Beat cream cheese and powdered sugar in another bowl until smooth; then mix in pumpkin puree and spices.
- Fill cooled taco shells with pumpkin filling and top with whipped cream and garnishes.
