Ingredients
- 1 1/2 pounds boneless skinless chicken breasts
- 3 bell peppers (green, yellow, red)
- 1 yellow onion
- 2 cloves garlic
- 3 tablespoons oil
- 1 tablespoon chili powder
- 1 1/2 teaspoons paprika
- 1 1/2 teaspoons cumin
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- Salt and freshly ground black pepper
- Juice of 1 lime
- 1/4 cup fresh cilantro (chopped)
- 8–10 small flour tortillas
Instructions
- Preheat oven to 425 degrees F.
- Lightly grease a large non-stick sheet pan. Slice the chicken and vegetables into strips; spread them evenly on the pan.
- In a bowl, mix all seasonings together. Sprinkle over chicken and veggies; drizzle with oil and toss to coat.
