- 3 tablespoons vegetable or canola oil

- 1 1/2 teaspoons cumin
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- Salt and freshly ground black pepper to taste
- Juice of 1 lime
- 1/4 cup fresh cilantro (chopped)
- 8–10 small flour tortillas
- Desired fajita toppings: Sour cream, sliced avocado or guacamole, pico de gallo, shredded cheese
Instructions
- Preheat oven to 425°F and grease a large sheet pan.
- Slice chicken breasts into strips and cut bell peppers and onion.
- In a bowl, mix seasonings and toss over chicken and vegetables with minced garlic and oil until evenly coated.
- Spread everything onto the sheet pan in an even layer.
- Roast for 15-20 minutes until chicken reaches an internal temperature of 165°F.
- Warm tortillas in the oven during the last five minutes of cooking.
- Serve fajitas wrapped in warm tortillas with lime juice and cilantro.
