Description

Spinach and Feta Quesadillas are a delightful fusion of fresh Mediterranean flavors, perfect for a quick meal or snack. Bursting with nutrient-rich spinach, creamy feta cheese, and savory grilled chicken, these quesadillas offer a satisfying crunch wrapped in soft tortillas.


Ingredients

  • 4 medium tortillas (flour, whole wheat, or gluten-free)
  • 2 cups fresh spinach (chopped)
  • 1 cup feta cheese (crumbled)
  • 2 tablespoons olive oil or butter
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1/4 cup black olives (sliced)
  • 1/2 cup cooked grilled chicken (diced)

Instructions

  1. 1. Heat olive oil in a non-stick skillet over medium heat. Add chopped spinach and sauté for 2-3 minutes until wilted. Remove from heat and stir in feta, sun-dried tomatoes, black olives, and grilled chicken.
  2. 2. Place one tortilla on a clean surface and spoon some filling onto half of it. Fold the tortilla over to create a half-moon shape.
  3. 3. Return the folded quesadilla to the skillet and cook for about 3-4 minutes on each side until golden brown and crispy. Repeat with remaining tortillas.
  4. 4. Let cooked quesadillas rest for a minute before cutting into wedges. Serve warm with your favorite dipping sauces.
