  • 1 large skinless salmon fillet (about lbs)
  • 2 cups fresh chopped spinach
  • ½ cup crumbled feta cheese
  • 2 cloves minced garlic
  • 1 tablespoon olive oil
  • 2 tablespoons softened cream cheese
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon dried dill (or 1 teaspoon fresh dill)
  • Salt and pepper to taste

Instructions

  1. Prepare the filling by mixing chopped spinach, crumbled feta, minced garlic, olive oil, cream cheese, lemon zest, lemon juice, dill, salt, and pepper in a bowl.
  2. Lay the salmon fillet skin-side down on a cutting board and spread the filling evenly over it.
  3. Roll the salmon tightly into a log shape from one end and secure with toothpicks or kitchen twine.
  4. Preheat the oven to 375°F (190°C) and place the rolled salmon seam-side down on a lined baking sheet.
  5. Bake for about 18 minutes until cooked through and flaky.
