  • 2 cups fresh spinach (chopped)
  • ½ cup crumbled feta cheese
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 2 tablespoons cream cheese (softened)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon dried dill (or 1 teaspoon fresh dill)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped spinach, crumbled feta, minced garlic, olive oil, cream cheese, lemon zest, lemon juice, dill, salt, and pepper. Mix until well combined.
  3. Place the salmon fillet on a cutting board and slice horizontally to create an even layer. Spread the filling mixture evenly over the salmon.
  4. Roll the salmon tightly from one end into a log shape and secure it with toothpicks or kitchen twine.
