- 1/2 tsp xanthan gum
- 1/3 cup cocoa powder
- 3 tbsp butter, cut into 3 pieces
- 1/2 tsp vanilla extract
- 1 cup heavy whipping cream, chilled
- 3 tbsp powdered Swerve Sweetener
- 1/2 tsp vanilla extract
- 1 tbsp cocoa powder
- 1/2 ounce sugar free dark chocolate
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, mix almond flour, cocoa powder, powdered Swerve Sweetener, salt, melted butter, and water until crumbly. Press firmly into a 9×13 inch baking dish.
- Beat softened cream cheese with powdered Swerve Sweetener until smooth. Add vanilla extract and heavy whipping cream; mix until fluffy. Spread over the cooled crust.
- In a saucepan on low heat, combine almond milk and half of the powdered Swerve Sweetener. Whisk egg yolks with xanthan gum in a separate bowl. Gradually add warm almond milk to yolks while whisking.
- Return mixture to saucepan and cook until thickened; then whisk in cocoa powder and butter until smooth.
