  • 2 medium butternut squash
  • 2 cups cooked chicken (shredded)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1/2 tsp dried thyme
  • 1/4 cup chicken broth
  • 1/4 cup Parmesan cheese (grated)
  • Honey, salt, and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Brush halved butternut squash with olive oil, drizzle with honey, and sprinkle with cinnamon.
  2. Place squash cut-side down on a baking sheet. Roast for 30–40 minutes until tender.
  3. In a skillet, sauté onion in olive oil until translucent; add garlic and cook until fragrant.
  4. Stir in shredded chicken and broth; heat through. Mix in Parmesan cheese and season to taste.
  5. Scoop out some squash flesh and combine it with the chicken mixture.
  6. Stuff each squash half with the filling and return to the oven for an additional 15 minutes.
