- 1 cup steamed and mashed sweet potato
- 1/3 cup cocoa powder
- 1/4 cup oat flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup peanut butter
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 3/4 teaspoon vanilla extract
- 1/3 to 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
- Steam the diced sweet potato until soft, then mash it and place it in a food processor.
- Add cocoa powder, oat flour, baking soda, salt, peanut butter, maple syrup, melted coconut oil, and vanilla extract to the food processor. Blend until smooth.
- Stir in chocolate chips by hand and pour batter into the prepared pan. Top with extra chocolate chips if desired.
- Bake for approximately 25 minutes or until a toothpick inserted comes out clean. Let cool before slicing.
