  • 1 cup steamed and mashed sweet potato
  • 1/3 cup cocoa powder
  • 1/4 cup oat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup peanut butter (or nut/seed butter)
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 3/4 teaspoon vanilla extract
  • 1/3 to 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. Steam the sweet potato until soft, then mash it until smooth.
  3. In a food processor, combine the mashed sweet potato, cocoa powder, oat flour, baking soda, salt, peanut butter, maple syrup, melted coconut oil, and vanilla extract. Blend until smooth.
  4. Stir in the chocolate chips and pour the batter into the prepared pan. Top with additional chocolate chips if desired.
  5. Bake for about 25 minutes or until a toothpick inserted comes out clean. Allow cooling before cutting into squares.
