- 1 cup steamed and mashed sweet potato
- 1/3 cup cocoa powder
- 1/4 cup oat flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup peanut butter (or nut/seed butter)
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 3/4 teaspoon vanilla extract
- 1/3 to 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
- Steam the sweet potato until soft, then mash it until smooth.
- In a food processor, combine the mashed sweet potato, cocoa powder, oat flour, baking soda, salt, peanut butter, maple syrup, melted coconut oil, and vanilla extract. Blend until smooth.
- Stir in the chocolate chips and pour the batter into the prepared pan. Top with additional chocolate chips if desired.
- Bake for about 25 minutes or until a toothpick inserted comes out clean. Allow cooling before cutting into squares.
