  • 2 medium sweet potatoes, cubed
  • 1 cup bell pepper, chopped
  • 1/2 cup onions, chopped
  • 4 cloves garlic, minced
  • 1 can (15 oz) chickpeas, drained
  • 1 can (14 oz) full-fat coconut milk
  • 4 tablespoons red curry paste
  • Salt and pepper to taste
  • Large handful of spinach, chopped

Instructions

  1. In a large pot, heat oil or vegetable broth over medium heat. Add minced garlic, onions, and bell peppers; sauté for about 3 minutes until softened.
  2. Stir in cubed sweet potatoes and pour in coconut milk along with red curry paste. Cook for about 10 minutes until sweet potatoes are tender.
  3. Add chickpeas and season with salt and pepper. Cook for an additional 6 minutes before adding chopped spinach.
  4. Serve the Sweet Potato Curry hot in bowls, either on its own or over rice.
