  • 1012 cups chicken or turkey broth
  • 1 large onion (chopped)
  • 45 large carrots (chopped)
  • 1 & 1/2 cups celery (chopped)
  • 1 sweet potato (peeled and chopped)
  • 2 cups coleslaw cabbage
  • 1 zucchini (chopped)
  • 1 yellow squash (chopped)
  • 4 cloves garlic (minced)
  • 1 can diced tomatoes
  • 1 can white beans
  • Various spices including oregano, basil, and thyme

Instructions

  1. In a large soup pot, sauté ground turkey and chopped onion over medium-high heat until browned.
  2. Drain excess fat from the pot.
  3. Add minced garlic and spices; cook until fragrant.
  4. Pour in broth and bring to a boil.
  5. Add chopped carrots, celery, sweet potato, and coleslaw cabbage; simmer for about 20 minutes.
