- 50 g (¼ cup) caster/granulated sugar
- 1 tsp salt
- 120 ml (½ cup) aquafaba
- 200 ml (½ + ⅓ cup) unsweetened non-dairy milk (soy recommended)
- 200 g (7 oz) vegan block butter or 160 ml (⅔ cup) mild olive oil
Instructions
- In a stand mixer bowl, combine both flours, yeast, salt, and sugar.
- Add aquafaba, non-dairy milk, and vanilla extract; mix to form a dough.
- Knead until smooth and elastic; mix in the softened butter or olive oil until fully incorporated.
- Let the dough rise overnight in the refrigerator.
- Shape into a loaf the next day and allow it to rise again until doubled in size.
- Preheat the oven to 180°C/350°F and glaze before baking for about 45 minutes.
