  • 1 head of cauliflower (cut into florets)
  • 3/4 cup brown rice flour
  • 3/4 cup unsweetened almond milk (plus more as needed)
  • pinch of black pepper
  • 1/2 cup Frank's Buffalo Sauce
  • 1 package soft tofu
  • 3 tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sea salt
  • handful of fresh parsley (finely chopped)
  • finely chopped kale or shredded romaine lettuce
  • thinly sliced cucumber
  • finely grated carrot
  • sliced avocado
  • large tortillas

Instructions

  1. Preheat your oven to 425°F.
  2. In a bowl, mix brown rice flour, almond milk, and black pepper; let sit for 5 minutes.
  3. Coat cauliflower florets in the batter and arrange on a baking sheet lined with parchment paper.
  4. Roast for 20-25 minutes until slightly browned.
  5. Toss roasted cauliflower with buffalo sauce and return to the oven for another 15-20 minutes until crispy.
  6. Blend tofu, lemon juice, vinegar, garlic powder, onion powder, sea salt, and parsley for the ranch dressing.
  7. Assemble wraps with your choice of veggies and drizzle with ranch dressing.
