- 1 (15 oz.) can chickpeas, drained
- 16 oz. frozen vegan potato gnocchi
- 2 cups fresh chopped kale or spinach
- 1 teaspoon apple cider vinegar
- Kosher salt (to taste)
- Fresh cracked pepper (to taste)
- Fresh chopped parsley (for garnish)
- Vegan Parmesan (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion, sliced carrots, and celery; season with salt and pepper. Sauté for about 8 minutes until softened.
