  • 32 oz. vegetable broth
  • 1 (13.5 oz.) can full-fat coconut milk
  • 1 (15 oz.) can chickpeas, drained
  • 16 oz. frozen vegan potato gnocchi
  • 2 cups fresh chopped kale or spinach
  • 1 teaspoon apple cider vinegar
  • Kosher salt (to taste)
  • Fresh cracked pepper (to taste)
  • Fresh chopped parsley (for garnish)
  • Vegan Parmesan (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, sliced carrots, and celery; season with salt and pepper. Sauté for about 8 minutes until softened.
  3. Stir in thinly sliced garlic and dried herbs; cook for another minute until fragrant.
  4. Add chickpeas and gnocchi, followed by vegetable broth and coconut milk; stir to combine.
  5. Bring to a simmer on medium-high heat, then reduce to medium-low. Simmer for 6-10 minutes until gnocchi is tender.
