- 4 onions, finely diced
- 3 cloves garlic, minced
- 2 leeks, chopped
- 2 carrots, diced
- 3 slices celery root/celeriac
- 2 cans white beans, drained
- 2 cans diced tomatoes, undrained
- 8 cups low-sodium vegetable stock
- 200 g freekeh (or TVP)
- Tomato paste, marjoram, oregano
- Fresh parsley for garnish
Instructions
- Prepare freekeh by grinding in a high-speed blender and soaking in vegetable broth overnight.
- Sauté onions and garlic in a large pot with a splash of water until softened.
- Add chopped leeks, carrots, and celery root; cook briefly until tender.
- Stir in remaining ingredients and mix well.
- Simmer on medium heat for about 20 minutes until freekeh is soft.
- Serve hot, garnished with fresh parsley.
