  • 1 medium yellow onion, chopped
  • 3 ribs celery, chopped
  • 3 carrots, sliced
  • 4 cloves garlic, minced
  • ¾ cup pearl barley, rinsed
  • 6 cups low sodium vegetable broth
  • 15 oz can petite diced tomatoes
  • ½ pound Yukon gold potatoes, chopped
  • ¾ cup frozen green beans

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, celery, and carrots; sauté until softened (about 5 minutes).
  3. Stir in garlic and cook for another 30 seconds.
  4. Add rinsed barley, Italian seasoning, thyme, salt, and pepper; mix well.
  5. Pour in vegetable broth and diced tomatoes; bring to a simmer.
  6. Cover and simmer for 25 minutes before adding potatoes.
  7. Continue simmering for an additional 20-35 minutes until barley is tender.
  8. Stir in frozen green beans during the last 5 minutes of cooking.
  9. Remove bay leaf before serving.
