Ingredients

  • 1 block firm or extra-firm tofu
  • Avocado oil spray (or other cooking spray/oil)
  • 1 small shallot, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups zucchini, chopped into 1/2-inch half moons
  • 3 cups carrots, peeled + chopped
  • 1 large bell pepper, cored + chopped
  • Salt + pepper, to taste
  • Optional garnish: chopped green onion, chopped parsley, toasted sesame seeds
  • 2 Tbsp toasted sesame oil
  • 3 Tbsp tamari or soy sauce
  • 1/2 tsp ground ginger (or 1 tsp freshly grated)
  • 1 Tbsp rice vinegar
  • 2 tsp cornstarch (or other thickening starch)

Instructions

  1. Drain the tofu, wrap it in paper towels, and press under a weight to remove excess moisture.
  2. Mix cornstarch with water in a small ramekin to create a slurry; combine all sauce ingredients in a bowl.
  3. Cut the pressed tofu into cubes.
  4. Heat cooking spray in a pan over medium-high heat; cook tofu cubes until golden on both sides, then set aside.
  5. In the same pan, sauté shallots and garlic until fragrant. Add zucchini, carrots, and bell pepper; stir-fry until tender.
  6. Return tofu to the pan, add sauce mixture, and toss everything together until heated through.
